I just found out there is a huge controversy surrounding agave nectar. Guess what: it isn't raw, it's highly processed, and it may not even be organic- depending on the brand. Real agave, the plant, is starchy, like corn. They take the juice from the agave, cook it down into a syrup, and it turns out much like high fructose corn syrup. Is it as bad as HFCS? I don't know yet.
Man. I thought I was so "there" with replacing bad sweeteners with agave nectar. It gave things a sweet taste without the honey flavor. But there is no sense in spending $5 on a little bottle of something akin to white Karo syrup.
I don't know anything about the person who wrote this article, but I don't want to promote something that might be harmful. It's back to honey for me.
