I admire that Dr. Pauling could take 18 g of vitamin C a day, but my bowel tolerance is 9 g, and many people only tolerate even lower amounts. Maybe if I had Lyme I could tolerate more -- I can't address that. Her comment about early Americans consuming approximately 20 grams of salt a day raises my eyebrows. It may be true (and what does she mean by "early Americans" anyway?), but I'd have to see her source first. On my RealSalt bag, it says 1/4 teaspoon = 1.4 grams. To get 20 grams of salt, I'd have to use 3.5 teaspoons a day. There is no way, and I love the benefits of RealSalt.
