Maitake is a good one. Generally, they mostly use the Beat 1,3 Glucans found in mushrooms. This will stimulate a th1 Response. In terms of auto-immune conditions, it depends on whether or not the condition is a Th1-driven or Th2-driven autoimmune response. You may have to do detailed immune system panels to determine that. In general, if caffeine makes you worse, you most likely have a Th2 autoimmune response. If Maitake makes you worse, you have a Th1-driven autoimmune response.
