Here is the recipe. I used to make a batch of about 12 pancakes so I would have something in a pinch when I was hungry. They should be stored in the fridge; they kind of get an off taste if they are left out esp if there is flax meal in them. I made a batch every day for months because my little boy got to where he would eat them as snacks. I could have made em in my sleep! And I think I used to dream about them at night too! I have not made a batch since before I went on vacation in May. Maybe this week I will make some.
I was unable to eat regular plain yogurt because of it not being fermented very long; it contains much more lactose than homemade yogurt that has been fermented a long time. I would ferment mine 20 hours or so which makes it pretty tangy. Then you can put some Stevia in it to sweeten. When I would put it on the pancakes, the pancakes were sweet enough to not need Stevia in the yogurt too.
When I was at my worst, there were very few, if any, ready made foods that I could tolerate. You are better off starting with the simple ingredients because making it yourself keeps it simple.

Here is my revised recipe.
1 1/2 - 2 cupa buckwheat flour
1/4 cup flaxseed meal (optional)
1-2 tbsp virgin coconut oil or pure olive oil
1tsp baking powder (aluminium free)
1 egg or egg replacer
2tbsp NuNaturals Stevia Powder
water to right consistency
Cook on low to med. heat on oiled iron skillet and let cool on a baking rack
I top them with homemade yogurt and cinnamon
I buy buckwheat now in 25 lb sacks and even my little boy has gotten to where he really likes them
