So kefir water is not supposed to be sweet, wow? I totally thought it was supposed to be. I keep a cover but not a lid. I put a coffee filter over the top of the big jar with a rubber band to strap it on. I was told to do this plus I was afraid a lid was going to fly off if it was too tight or the jar might "blow up" or something.
So in order to get the tart and fizz you need a lid? How tight should the lid be? Do I need the lemon and fig also or can I still get away with only using the kefir water grains and the spring water? I just want to get it right, the kefir water was supposed to be a big part of my health regimen.
I used the coffee filter cover with my kefir milk last year. I really didn't notice any benefits from that. Maybe it was kind of the same situation with not using a lid.
