Hi- I made coconut kefir for the first time and it did not turn out well. I'm wondering what I might have done wrong.
I took the juice from 4 young coconuts, heated it to 92 degrees, poured into a glass container and added the grains. I shook it and then let it sit in the cupboard for 48 hours, refrigerated it for 24 more hours and then had a glass. It tasted flat and almost moldy. The coconuts were fresh, not gray. Any ideas what could have happened? Are my fermenting times off?
