Since the weekend is coming up....you should make a big pot of bone broth, get some beef soup bones (ox tail would be good) and put in a pot, fill with water to cover with a splash of vinegar and bring to a boil... skim off the foam and cut heat back to a simmer. Simmer for several hours (all day) until the cartilage has dissolved. You can saute throw garlic, celery, carrots, parsley and onions for flavor. Don't worry about chopping up, just cut enough to fit in the pot. You won't be eating these veggies, they're there for the flavor. After it's simmered for several hours -- the longer the better, it should be nice and rich and concentrated. It'll be full of minerals and collagen.
