Just because something is stable doesn't mean it's safe or healthy. Anyway, just like there are different types of saturated fats, there are different types of unsaturated fats. Monounsaturated and Polyunsaturated fats are relatively ok, but Trans unsaturated fats should be avoided.

If you're worried about lipid peroxidation, then make sure you're getting enough antioxidants.
