I have been recently trying to make Coconut Water kefir per the Body Ecology Diet. I recently purchased the Body Ecology Kefir Starter Packets and have been following their instructions to ferment store bought coconut water. It says to ferment for 48 hours and after tasting the coconut water at that time- it is still sweet! Is this normal and is this okay for a candida diet?
I tried fermenting for a longer period but it still stays just as sweet. I have also tried to do different brands (Brian and Amys, Taste Nrivana).
Has any one had any good luck with the Body Ecology starter packs and store bought coconut water? I read on their website that this can be done, it just still seems too sweet to be drank on the candida diet!
P.S. I know I should use real coconut juice but I just don't have time for that.
