My girlfriend can't eat wheat in the US. But in Portugal and Spain this summer she was fine....and she ate it every day.
I was thinking Genetically-Modified-Organisms also, but a doc I know told me it is the hybridization of the US Wheat. She said the US just started sending our lovely hybridized wheat to Italy about 4 years ago and the rates of celiac have gone up 30% over there...crazy!!!!
someone else told me is the mold because we store our grains in bigger silos here for longer times...????
