I still have to see whether that Mon-Sat plan would work. I'm starting today. My intention is to eat only fruit and veggies but if I'll have any specific craving I'll eat that as well. I'm a vegetarian for years so at least meat is out. I hope through the process my cravings for wrong food will disappear. We will see.
My understanding is that one day of eating would not completely break ketosis; according to some readings, ketons need a few days to completely withdraw. That will slow down cleaning process,for sure, but that is my intention. I hope that will allow me to fast longer than I would be able otherwise, perhaps 40 out of 45 days, or more. We will see.
