Right on! There's a reason why our great grandparents never had all these issues. Because they ate GOOD food and hearty soups! My favorite soup:
2 lbs chicken thighs/drumsticks
1 qt veggie broth
2 big bunches of curly kale
1 lb baby carrots
6 Celery stalks
Seasoning- black pepper, garlic powder, Celery salt, fresh chopped basil, and 1 bay leaf
All ingredients organic of course!
In a big soup pot, put about 1 inch of olive oil and brown up the chicken. This is when I season it with the garlic powder, Celery salt, and pepper
After the chicken has been browned on both sides, add 1 qt of veggie broth and about 2 qts spring water (depending on the size of your soup pot). Bring it to a boil, scoop out the raft (the foamy fatty stuff that accumulates on the top)
Then add in your chopped celery and fresh basil. Boil for about 5 minutes or so, then throw in your carrots and kale. Turn down the heat to a nice bubbling simmer and let it cook for about 1 hr 45min to 2 hrs, stirring occasionally.
This will give you meals for about three days, and you can even freeze some for later too :)
