I bought a little glucose monitor from Target. They have a good one that costs $15 and the test strips are only $20 for 50 count. I test myself first thing in the morning always. For the first few weeks I was testing myself before meals and then again 2 hours later. I keep a food journal and recored how many carbs in each meal. I did this so I could find the "sweet spot"- too little carbs and I feel weak and lethargic, too many sends my blood Sugar way up and then it crashes.

By using the glucose monitor and recording the carbs, I was able to figure out that I do well consuming at least 15g but no more than 30g of carbs per meal.

Now I don't have to test so much because I know how much carbs are in the portions of foods that I regularly eat, but I still do it if I am introducing a new food, or eating something that is a little more starchy.
