Skipping breakfast is taking its toll on you. Try having banana smoothies in the morning. There are fast and easy to make and are easy on digestion unless you drink it too fast. You can take it in the car with you. I pretty much have two before lunch. 1 cup of berries, sometimes 1 cup of baby spinach, with 5-7 bananas to make 1 litre. That's about 600-700 calories per litre. So I'll have one for breakfast and the other one between breakfast and lunch.
Your diet doesn't seem too bad from what you posted. You have to make your staple either fruits or starches to get enough carbs and calories. High-fat is where people screw up to try to conveniently get condensed calories so they don't have to eat as much, but high-fat with carbs causes weight gain along with too much sodium.
