Yes, I do take breaks from Iodine and most of the other supplements. I believe it is good for the body to catch up once in a while.

What I do take daily right now, is vit C 4-6 grams, potassium, magnesium. Never tried the 10-20 grams of vit C though, as my bowel tolerance is far below this. But, yes; vit C probably has an effect on fatty acid metabolism; thinking of the reduction of heart disease after the nobel prize on vit C; Linus Pauling. People started to actually take vit C on a daily basis, then quit when the drBig Pharma told them to.. "Dr. Linus Pauling, famous for his work on vitamin C, proposed vitamin C deficiency as a possible cause of CHD.9 A six-year Finnish study linked low blood levels of vitamin C to increased risk of heart attack during subsequent years.10 As an antioxidant, vitamin C protects against free radical damage. It has the effect of making oxygen metabolism more effective and may also help prevent clot formation. Vitamin C is essential for the production of collagen and therefore protects the integrity of the artery walls. Vitamin C is used up very quickly during periods of stress."
