I wasn't struggling with making it, I was struggling with Andrew Fletcher's instructions which seemed very different. Math is not my strong point. But I finally figured it out, and he's only a little different. By the way, his water calculation that I posted should read 4 oz, and not 4 grams.

What I am really struggling with right now is making pie crust from scratch. It's not bouncing off the floor anymore, but tender and flaky it's not.
