Oil is okay all through , we tend to favor coconut and olive oil because they can bare high temperature, and olive oil due to its omega 3, but you can eat about just any oil. Canola oil is almost tasteless and has plenty omega 3. Grape seed oil has omega 9.
You basically want to avoid too much omega 6. You simply need to balance the omegas. Almond oil would not change the taste, but would be rather expensive. I am tolerant to butter (but I would not swear this one is OK for all of us -one needs to find out what 's good for oneself) I use a lot of canola oil in my homemade mayonnaise. I would suggest you try canola.
