Herbal Tea

Typically herbal tea is made by pouring boiling water over the tea and allowing it to steep for 12+ hours, the strain and ad what you desire and then freeze or another option is to can in quart jars.

A simple canner by BALL is not a steam canner---the real deal is steam canning, but for simple stuff, the ball commercial canner basically just "boils" the jar for 10-20 minutes---while steam canners build up several pounds of pressure and sterilizes deep into fresh picked vegetables...

For tea, the simple 1 step ball canner seems to work fine. This way your tea is boiled sterile some what and vacuum sealed in glass-------then easy to store on a shelf or take on a camping trip, etc.

I like experiencing with blending in fruit juices and basically you can make tea from most any herb...

Old order Amish mostly use ice houses--so they have little to no refrigeration----very often to see them can 1,000+ jars of food per summer. They can their own fruit juices, like apples, grapes, etc. THEY CAN ALLOT OF MEAT---they love meat.
