isn't it possible that your malabsortion is caused by a lack of beneficial bacteria? lack of beneficial bacteria sounds to me like a "terrain" issue, that is, the condition of your gi tract is not hospitable to beneficial microflora. perhaps it was because you were eating gluten before, causing damage. can you tolerate real kefir (homemade from the grains)? if so this might be a powerful way to help re-establish beneficial microflora.
