One of my fav noodle dishes is bean thread spun into long noodles and wound in a cake like fashion. They are very cheap in the Asian food section of your market. I soak them in water for about 30 min. then toss out the water. Then I put a quart box or two cans of chicken broth in a pot and the noodles. Cook al dente or softer. When almost done, add a couple stalks of green onions chopped and bits (maybe a handful) of spiced meat (any kind). Everyone loves them, including the kids!
