Saliva pH can mean different things in deifferent bodies and physical or disease conditions.

Tehr doe not seem to be one authoritative article covering the entire subject of Saliva pH. So I found a few, articles, and I will put the links here, to furhter the discussion, and serve as my own reference.

Janet Hull's overview: Saliva pH 6.4 is Ok, over 7.5 give mineral deposits.
