Unrefined, organic, virgin coconut oil (assuming it hasn't been poisoned or some such...) is a perfectly healthy food. Chances are you'll get tired of it well before you can eat "too much".
I fed my wife as much coconut oil as I could during her last pregnancy. The one thing she couldn't tolerate, however, was frying with it -- the odor of heated coconut oil nauseated her, so we stuck with palm and olive for any frying.
