Yes, enzymes are important, but you have to understand, raw foods are very very hard on all of the major organs and weakened digestive systems. And most of us here are dealing with weak, debillitated organs.

You know the enzyme story, but you don't know the organ story. Organs come first before enzymes.

A body in a weakened state needs very easy to digest things. Raw foods with all of their phytotoxins do not help this process, despite the presense of enzymes. The enzymes people need most are pancreatic enzymes, which are not in foods, bile salts and stomach acids - HCL, betain, etc. Cold foods that chill the body do not help the major organs to produce and expel these very necessary components to thorough digestion.

Once someone has reestablished strength, to continue that strength and raise vitality, they should start introducing raw vegetables. But to do that at first is pointless. The vegetables will just go through the entire system completely whole and add to the trash can that is the colon. You can verify this by doing colonics and enemas. I've watched many salads pass out of me completely whole, just chewed up by my teeth, not at all chewed up by my digestive system.

Theories of the importance of enzymes and raw foods is new data from just 40 odd years ago. Healing via diet via Ayurvedic and Chinese methods are ancient - thousands of years - with plenty of empirical and anecdotal evidence.
