I can't directly comment on your question, but might note that other protein-digesting enzymes include papain (from papaya) and bromelain (pineapple) as well, for what it's worth. Papain is the active ingredient in many kitchen meat tenderizing products. Pancreatin also includes a protein-digesting component, and Ox Bile Extract a fat-digesting component if I recall correctly.
