Everybody's body is different and responds to different techniques. There's the Warrior Diet, which basically details easy fasting during the day(with water and fruits) and after working out in the afternoon/evening, eating a days worth of calories in the evening. It's pretty consistent with the conclusions that many people have found out that giving their digestive system time to rest is really beneficial. Secondly, if you can't tolerate gluten, how much fiber are you getting in your diet? Maybe an source of fiber from oats/amaranth/quinoa would help, because your body will cling to fat if your nutrition isn't balanced. Also, maybe raw protein might help.
