I remember hearing about ground beef having more bacteria. It was on some television show that was telling you why you should always eat burgers well-done. On the show, they said it was because the places that grind the meat use the same machines to grind pork and chicken as they do for beef, and there are a lot of bacteria in chicken and pork.

In my opinion, if you grind it yourself and eat it soon thereafter and if your machine was not dirty then I think eating ground meat is no different from eating whole raw meat. I have eaten raw beef and it didn't kill me. I do a parasite cleanse annually, though (just in case).
