You are asking very good questions. Try doing a web search on "glycemic index" and "glycemic load". Unfortunately, candida can live on almost any dead organic material, including animal protein. However, candida will reproduce geometrically (double every twenty minutes) when feed its' preferred diet of glucose or other simple carbohydrates. You will never bring candida under control if you give it food that allows it to reproduce so explosively. This why even one serious "cheat" on your candida diet can set you back weeks and weeks. The only thing that keeps the candida population in check is the much larger population of lactobacteria. A person with candidasis does not have that much larger population of lactobacteria. So, even one hot fudge sundae allows the candida population in the intestines to explode, the total amount of Sugar in the sundae being the only limit.
