I've tried this delicious recipe for marinated raw collards: Stack the collard leaves and roll into a toll. Finely shred the collards into tiny strips (I use my food processor). Mix in 1/4 c of diced red onion, add 1.5 T of Olive Oil and 1.5 T of Flaxseed Oil, the juice of 3 fresh squeezed limes, and 1 T of shoyu or soy sauce. I like to add fresh pineapple chuncks for that sweet and tangy taste. You can refrigerate this for a few hours and its a delicious salad.
