What else could I be doing to rebuild my metabolism?
Put on muscle by lifting weights/strength training regularly. This will directly increase your metabolism. It will also decrease your waistline as a pound of muscle takes less volume than a pound of fat.

I'm not sure why you never exercised before, but once you cease your sedentary lifestyle, you will increase your calorie needs and perhaps create the calorie deficit you seek.
