guar gum acts as a replacement to the gluten and helps bind it all together. You can also use xanthum gum but if you are sensitive to corn, whcih i am, be really careful of its source. After 6 months of breathing problems i finally traced the source back to the fact that Bob's Red mill brand use corn in the process of growing the xanthum gum. But it can also be made from fermented cabbage as well, so just be sure of your source.
