I think that the book has to be read many, many times in order to get the full message properly.

When cream and berries are eaten together, the berries extract the toxins and the cream holds it so that it does not go back into the tissues. You will notice that when AV talks about drinking the green juices, he advises taking a tsp. of cream or coconut cream after the first mouthful of juice. This would be to capture the toxins which are being forced out of the tissues by the juice.
