Cultures around the world do drink blood.

My concern from what you stated though is the source of the blood - I wouldn't want blood from a Slaughterhouse personally. I'd be much more comfortable with blood from a local fresh butcher or someone whom cleaned their own animal. Pathogens or not. You've no control on the health of the animal(s) sourced for the blood from a slaughterhouse.

Also I am not sure that consuming thawed blood is the wisest of ideas either. I'd want it fresh {still warm}. As with most foods the Enzyme activity is much better fresh food....

In terms of any real documentation all Icame across is this: The Concern would be drinking Human Blood and the transmission of diseases like HIV/AIDS...
So as stated above you only want fresh blood from a healthy animal under any of the circumstances.
