The kichadi recipe is actually quite easy after you do it once. Mung bean can be found anywhere - health food stores, ethnic foood stores, you gotta find the good stores! :)
it makes a good-sized pot! Mine always comes out like a very thick stew, but you can add water until you get the consistency you want. Ever have lentil soup? Some people fix it like that. I fix it more like pea soup, thicker even. It IS rice after all! :)
