I assume the jar had a smaller diameter neck than the main body, right? Well, what might have happened is that the water first froze at the open top of the jar, and formed a plug (the glass of the jar is probably a better insulator than just air). As the water froze below the plug, it expanded, ultimately breaking the jar.
