Almond

Usually we have to soak the almond for overnight and get rid of the skins/acidity, and i've read 3-4 days it will get mold/spoil somethings like that, Like Hummus/Chickpeas we can store up to 10-14 days, if i'm gonna make Almond paste like hummus, how it can be last in the fridge? any idea, u know, it's troublesome to make hummus, we have to simmer it for 1 hours and somethings elso, but with almond we don't have to, thanks
