Any time I've ever soaked nuts for more than 24 hours, they've gone bad. I hate soaking nuts!

Want to try a really great hummus that doesn't use any beans at all? The benefits to this are - cheaper, easier, faster, no soaking, less fat, and less....um...flatulence, if that's a probem for you with nuts.

No Bean Hummus

1 zucchini, peeled, chopped
the juice from half a lemon
some celtic Sea Salt
some pepper, or cayenne
a garlic clove or two
1 heaping tablespoon of tahini
some sesame seeds (very optional)

Just puree it all in your blender, and add more or less of the lemon and salt and pepper and garlic to taste. I sometimes make it without the tahini, and that tends to be a little watery, so I strain in through a cheesecloth, it comes out beautifully. The color is very nice, very refreshing. The color is deeper and still pretty if you leave the peel on the zucchini. This recipe is flat out delicious! Everyone who tries it adores it, rawwies and non-rawwies alike. Enjoy.
